Describe the atmosphere of your business? American Bistro -

"It's a warm feeling; it's kind of like a Cheers souped up," Kollintzas said.

The recent remodel was done by his wife Christina Kollintzas, who is an interior decorator by trade. The expansion allowed the restaurant to not only add space, but also build a larger bar and incorporate more craft beers onto the menu.

How many years have you been in business? 9 years (2004)

Why did you decide to locate in Joliet? Kollintzas said he liked the location, right on Essington Road and with family roots in restaurant ownership, (Kollintzas' family owns George's in Lockport) opening a restaurant was a natural fit.

Is there anything you'd like to tell Patch readers? "We're still a friendly, family-oriented place," he said.

When the new menu launches in the coming months, Metro Grill will offer pastas, hand-packed burgers and gluten-free options.
