Next Restaurant Announces 2014 Menus

Grant Achatz will take on steak, Chinese and a look back at one of his own pivotal past menus in 2014.

Grant Achatz’ Next restaurant has announced the three menus it will be serving next year. The highly sought after tickets will be available “sometime after Thanksgiving,” according to the restaurant’s Facebook page.

Next is Achatz’ less expensive (though don’t confuse that with inexpensive) restaurant as compared to Alinea. Next serves one menu at a time for several months, selling tickets ahead of time instead of taking reservations and offering a la carte menus.

First up will be a nostalgic take on the traditional Chicago steakhouse. The description reads: “Next: Chicago Steak will marry the simple and delicious with wonderfully sourced ingredients, modern techniques, and an old-world vibe. Expect a party.” That menu will run from January through April.

After that, running from May to August, will be “Chinese: Modern.” The restaurant describes it this way: “What happens when a thousand year-old cuisine collides with the mind-set of culinary innovation?  As China goes, so too does our Chinese Modern menu at Next.“

To conclude the year, running from September through December, there will be an homage to Achatz’ former restaurant, Trio, and the Jan. 20, 2004 meal he cooked that sparked the idea for Alinea. According to the restaurant, “A unique retrospective on the nascent ideas that became an identifiable cuisine... as well as a few 'classics' that were long ago put on the shelf, this menu will transport diners back to a great time in chef Achatz' career.“
